What is malt syrup

Maltose is a disaccharide formed by connecting two glucose units through an α-1,4 glycosidic bond, also known as maltose. Depending on the position of the C1 hydroxyl group, there are two isomers, the α-isomer and the β-isomer.

Maltose should have different divisions in various industries, which can be divided into ordinary type and high maltose type. Maltose syrup with a mass fraction of not more than 60% is ordinary maltose syrup. Maltose mass fraction between 60% and 70% is called high maltose syrup, and maltose mass fraction over 70% is called ultra high maltose syrup.
